In powder - to realize sponge cake and swiss rolls

Ingredients

sugar, maize starch, wheat flour "00" type, fat reduced cocoa, emulsifiers E472b E472a (contains milk), leavening agents disodium pyrophosphate sodium bicarbonate, flavourings, salt, vanilla pods extract.

Use mode

For sponge:
1 kg of Chocolate Pandis, 450 g whole egg, 100 g cold water.
DIRECTIONS:
A) Join all, amalgamate in planetary mixer at low speed for about 1 minute;
B) Whip at medium speed for about 5 minutes;
C) Bake in oven at 180° C for maximum 20 minutes.

For swiss roll:
1 kg Chocolate Pandis, 450 g whole egg, 100 g cold water.  For swiss roll
DIRECTIONS:
A) Join all, amalgamate in planetary mixer at low speed for about 1 minute;
B) Whip at medium speed for about 5 minutes;
C) Bake in oven at 210°C for 6-8 minutes.
