Chocolate pandis®
In powder - to realize sponge cake and swiss rolls
sugar, maize starch, wheat flour "00" type, fat reduced cocoa (7,5%), emulsifiers E472b E472a (contains milk), leavening agents disodium pyrophosphate sodium bicarbonate, flavourings, salt, vanilla pods extract.
For sponge:
1 kg of Chocolate Pandis, 450 g whole egg, 100 g cold water.
DIRECTIONS:
A) Join all, amalgamate in planetary mixer at low speed for about 1 minute;
B) Whip at medium speed for about 5 minutes;
C) Bake in oven at 180° C for maximum 20 minutes.
For swiss roll:
1 kg Chocolate Pandis, 450 g whole egg, 100 g cold water. For swiss roll
DIRECTIONS:
A) Join all, amalgamate in planetary mixer at low speed for about 1 minute;
B) Whip at medium speed for about 5 minutes;
C) Bake in oven at 210°C for 6-8 minutes.
