The last Fugar newborn, Zoe, is featured by the full lack of emulsifiers, particularly of Monodiglycerides.
The emulsifier action is ensured by organic proteins and by vegetable fibers. The dried milk 100 % Made in Italy (another Fugar’s product with exclusive selling rights) completes the features of a mix suitable for all those professionals wishing to emerge for their ingredients’s selection, their brand image and attention to new trends of modern food industry.
The overrun performances (air inflation inside gelato), until today performed by emulsifiers, are replaced with the the deep knowledge of balancing completely natural elements.
