Hot and cold process
Compound ingredient (in powder) for Pastry CUSTARD
Ingredients
sugar, skimmed milk powder (20%), thickener modified starch, dextrose, salt, flavourings, vanilla pods extract, colourings E 160b (ii) E101.
Use mode
500 g Cremamica, 1 l water or UHT milk.
Cold working: mix quickly with a whisk or in a planetary mixer for about a minute. Set aside for at least 5 minutes. Stir again quickly for about a minute.
Hot working: heat water or milk and add Cremamica, mix with a whisk and bring to a boil. Transfer the mixture to the planetary mixer and let it blend for a few minutes.
