First flavor
Mix 280 g of Quenelle and 1000 g of fresh cream. Amalgamate by hand in order to achieve a well melted powder and without lumps. Mix in the kitchen aid in order to achieve an average texture.
Softly incorporate Special Coffee Paste.
Second flavor
Mix 250 g of Quenelle, 1000 g of fresh cream and 35 g of Sweetened Condensed Milk. Amalgamate by hand in order to achieve a well melted powder and without lumps. Mix in the kitchen aid.
Fill in the specific ice cream trays by layer with Ciocco Pandis soaked with Junior Coffee liqueur, interchanging the flavorings.
Decorate with chocolate coffee grains.
Stabilize in blast chiller.
